Pickled Potato Salad
Serves 4-6
No, by “pickled” I don’t mean laced with vinegar; I mean real pickles and their juice.
4 medium russet potatoes, quartered
5 Tbsp juice from Kosher dill pickles
4 Tbsp finely chopped dill pickles
1/4 cup chopped parsley
1/2 cup chopped red onion
3 ribs celery, chopped
2 chopped scallions, including the greens
1/2 cup mayonnaise
1 medium apple, peeled & diced
3 tsp Dijon mustard
Sea salt and White pepper to taste
Bring a pot of water to boil. Add the potatoes with the skin on and simmer for 20 minutes. Remove the potatoes from pot and let them cool a bit so you can handle them; they should still be warm.
Put the potatoes into a large bowl, add the pickle juice, chopped pickles, parsley, onions, celery, and scallions.
In another small bowl, mix mayo, mustard, salt and pepper to taste; mix with the potatoes and serve.
