Arrive home at the end of the day and your dinner is waiting for you. (Ok, so maybe you have to add sour cream or something to complete the dish with some of these).
I hope your crockpot, or "slow-cooker" if you prefer, is up-to-date. It should be one that will "hold" for a couple hours after cook-time is past so you're not racing home to rescue dinner.

2-lb boneless lamb shoulder, visible fat trimmed, cut in 1-in. pieces
1 can (14 1/2 oz) diced tomatoes
1/2 cup chopped onion
1 Tbsp minced garlic
1/2 tsp each Greek herb seasoning and salt
1/4 tsp pepper
1 can (19 oz) cannellini beans, rinsed
1 can (13.75 oz) whole artichoke hearts , cut in half
3 cups baby spinach (3 oz)
2 tsp grated lemon zest
Topping: crumbled feta cheese
Mix lamb pieces, tomatoes, onion, garlic, Greek seasoning, salt and pepper in a 3 1/2-qt or larger slow-cooker.
Cover and cook on low 7 to 9 hours or until lamb is tender when pierced.
Mash 1 cup of beans, stir them and the whole beans, artichoke hearts and spinach into your cooker. Cover and cook on high 15 minutes or until spinach wilts and mixture is hot.
Stir in lemon zest; sprinkle with feta. Serve.
Slow-Cooker Honey Wheat Bread
Makes 1 loaf”Why would I bake in a slow cooker if I have an oven?” If you have an oven just move on; this method is for folks who don’t, like students in a dorm, a person in a rented room, a vacationer in a really crummy cabin in the woods.
If you’re going to try this you’ll need a cooker that allows you to set the on and off times since many baked items, like this one, bake for only 3 hours or so. If you don’t have one of those you could use the same timer you currently use to turn lights on-and-off when you’re away from home.
And if you want a regular-sized loaf of bread, you’ll need a 6 or 7-qt cooker because you put the dough into a loaf pan and the pan goes into your cooker. (Maybe you just want buy a bread-maker if you don’t already have one. And if you do, why are you fooling around with this cockamamie recipe?)
2 cups warm skim milk
2 Tbsp vegetable oil
2 Tbsp honey
2 Tbsp molasses
3/4 tsp salt
1 pkg. active dry yeast
3 cups whole wheat flour
3/4 cup bran
1/4 cup wheat germ
Preheat crock pot on high setting for 30 minutes.
Combine warm (not hot) milk, oil, honey, molasses, salt, yeast and half the flour. With your electric mixer, beat well for about 2 minutes. Add remaining flour; mix well. Place dough in well-greased baking pan; cover. Let stand 5 minutes, then place in the crock pot, cover and bake on high setting 3 hours.
