Quick and Easy Recipe Sampler

Hi! You're here either because you like to cook or have to cook. In either case, "easy" and "quick" are important to you.

This page will give you a feel for the quality and, well, "style" of my recipes. It will also give you a sense of the variety offered here.

I promise not

to lead you down a path with a recipe that's easy but only claims to be quick; none of those recipes they tell you take "just 15 minutes" but really take hours when you add cooking, marinating or chilling time. Those might be easy but quick? Uh, uh.

(DISCLAIMER!DISCLAIMER!) There is, however, one page where you won't go from start to finish in about half-an-hour. That would be the crockpot page - but in a way they are quick and easy - little prep time(Quick)& simple to put together(Easy).You can serve roast beef or roasted whole chickens just a few minutes after getting home in the evening. And I only present ones tht can cook all day without any help from you.

So, please, take a look at these samples, and I think you'll see what I mean by "quick and easy" as well as "exciting and fun"

Scrambled Eggs - New Mexico Style
Serves 4

Why New Mexico? I'm told this tasty dish is similar to one native to that part of the country, called migas

I'm tempted to dice up a Roma tomato and toss it in, too, but that might compromise this easy recipe's native integrity (What is he talking about???. This is just a RECIPE!)

4 large eggs
4 large egg whites
1/2 cup coarsely crumbled tortilla chips
Salt & freshly ground black pepper
2 tsp unsalted butter
2 green onions, sliced thin
i jalapeno, seeded and minced
1/4 cup minced cilantro
Salsa, optional

Whisk together eggs and egg whites in a medium-sized bowl. Add tortilla chips, salt, and black pepper; set aside.

Melt butter in a medium-sized nonstick skillet over medium heat. Add green onions and jalapenos and stir them around slowly for less than a minute until they soften a bit.

Add the egg mixture, sprinkle with cilantro and scramble those eggs, over medium heat until just softly set. If you prefer your scramblers like popcorn keep on scramblin'.

Serve with salsa for authenticity's sake, and because it tastes good.
