Easy Pasta Recipes - All Very Special,and Ready to Serve in Half-an-Hour
Pasta - A quick main course? An easy side dish? I'll show you both. For a terrific one dish meal do some exciting things with ingredients like seafood or chicken and veggies. As a side dish just serve it up with a little olive or canola oil - the healthful oils. Or add a prepared or home-made creamy Alfredo or another favorite sauce while you put together a quick & easy entree.Now, boiling the salted water and cooking the pasta will usually take the better part of 15 minutes. But, that's the time you use to put the rest of the dish together.
And if you're a carb-watcher you must know by now that there's a white pasta available (for a bit more $$$) that offers 3 to 6 grams of fiber and only around 5 net grams of carbs. And this stuff, one is "Dreamfields", another, "Ronzini Smart Pasta", tastes and "feels" just like the traditional.

Of course, there's still whole-wheat pasta which is fine if you like the taste of whole-wheat bread on a fork.

Penne With Sausage And Ricotta a la Calabria
Serves 6
You don't see ricotta or nutmeg in your typical pasta and sausage dish but we aren't looking for "typical", are we?
1/2 lb sweet (mild) Italian sausage
1 lb each Penne pasta & ricotta cheese
1/4 cup fresh parsley, chopped
1 tsp red pepper flakes (optional)
1/2 tsp black pepper
1/4 tsp salt
1 pinch nutmeg
1 cup Pecorino Romano, grated
Puncture sausages with a fork. In a skillet, bring sausages and 1/4 cup water to simmer over medium heat; cook, turning often, for 3-4 minutes or until water evaporates. Continue cooking and turning often, for 8 minutes or until no longer pink inside.
Meanwhile, in pot of boiling salted water, cook penne for 8-10 minutes or until tender but firm (al dente); drain in colander, reserving 1 cup liquid.
In same pot, combine 3/4 cup of the reserved cooking liquid, the ricotta, parsley, red pepper flakes, pepper, salt and nutmeg. Stir in sausages, then penne. Mix in remaining cooking liquid if necessary to make mixture shiny.
Serve sprinkled with pecorino.
